Mac & Cheese
Mac & Cheese:
1/2 cup of soaked cashews
2 cups of oat milk
1 tsp Miso paste
1 tsp Tomato puree
1 tbsp Lemon juice
1 tsp Onion powder
1 tsp Garlic powder
3 tbsp Nutritional yeast
Salt to taste
Pepper to taste
Cayenne to taste
Blend all of the ingredients in a high-speed blender like a nutribullet and mix cooked macaroni, sprinkle on some paprika to serve.
Masala Scrambled Tofu
1 tsp oil
1 finely diced onion
2 finely diced cloves of garlic
2 finely chopped deseeded tomatoes
1/2 tsp turmeric
1/2 tsp ground cumin
1/2 tsp garam masala
1/2 tsp asafoetida (optional)
Salt and pepper to taste
Finely chopped green chillies to taste
1 block squeezed tofu (I use two tins to squeeze the liquid out) Chopped coriander
Add the oil to the pan and once it is hot, add all the ingredients except the tofu and coriander. Cook until the onion, garlic and tomato are soft. Then crumble in the tofu and cook until the tofu had firmed up, and any moisture from the tofu had evaporated. Taste and adjust seasonings if needed. Turn off the heat and add the fresh coriander.
Serve on some toasted crusty bread with a dollop of ketchup
Black bean, pepper and veggie mince tacos:
1 tsp oil
1 tin black beans
3 chopped peppers
1 chopped onion
3 chopped garlic cloves
1/2 bag of meat-free mince
1 tsp paprika
1 tsp smoked paprika 1 tsp ground coriander
Salt and pepper to taste
1 tsp ground cumin
1 tsp cayenne pepper 2 tbsp tomato puree 1 cup water 2 chopped tomatoes Some taco shells or soft tacos
Fry onions and garlic in oil
Add black beans, peppers, soya mince
Add salt, pepper, paprika, smoked paprika, ground coriander, ground cumin and cayenne pepper
Once the spices have been fried add a few tablespoons of tomato puree and a cup of water
Add tomatoes, I used fresh but tinned is fine too
Put the lid on and simmer so everything is soft and delicious
Take the lid off and cook off the extra liquid so it is thick enough to fill in a taco
Get taco filling and get them in your mouth!
